Ask what happens on the busiest day
A good capacity discussion should include specific questions. How many covers are expected during high season? How often are functions held? These details turn a generic estimate into an operating plan. They also help determine whether a rental arrangement is useful before a permanent installation. Consider the waste stream, not just its weight
Ten kilograms of prepared vegetable trimmings does not behave exactly like ten kilograms of mixed plate waste. The system should be selected for the type of organic waste your operation produces, with clear procedures for removing contaminants.
This is why segregation matters as much as capacity. Compostable-looking packaging, gloves, labels, cling film and disposable cutlery can undermine a good programme if they are regularly placed with food waste. They provide a way to test actual volumes, refine staff routines and demonstrate results before finalising a longer-term investment.
